Simply Delicious slow-matured Kalamata table olives
Kalamata olives are processed on Awakening Farm in Inn-O-Vat fermentation vats, following the natural process of solely salt addition. Fermentation proceeds slowly and is completed after approximately 6 – 8 months.
The longer the olives are allowed to mature in the original brine, the more integrated the flavours and better the final product.
Simply Delicious Kalamata olives are allowed to mature for at least 12 – 18 months, after which time they are in fact simply delicious.
